Shortbread Diamond Bars
This won a Blue Ribbon at the County Fair. Everyone likes these bars. They are so simple to be so good. Cut any shape you want.
1 cup butter
1 cup sugar
1 egg (separated)
½ teaspoon vanilla
2 cups flour
¼ teaspoon cinnamon
Pinch salt
2 teaspoon baking powder
½ cup chopped nuts, toasted
Toast nuts in 1 teaspoon butter in a skillet just until brown. Stir all the time and do not burn. Cream butter and sugar. Add egg yolk and vanilla and mix well.
Add flour, cinnamon, baking powder and salt. Press in greased 15 X 10 X 1 in. pan. In bowl mix egg white until foamy and brush over dough. Sprinkle with nuts.
Bake 300 for 40 min. Cut into diamond shapes while warm. You can use other shapes if you like.
